Dinner: Stuffed Mushrooms

Stuffed Mushrooms are an absolute favorite of mine when I want to go for a meat free dinner. As illustrated in the picture above I love mushrooms that come in all shapes and sizes and so flat caps are no different. In a way I feel like they have a slight edge on all others because you can fill them with such tasty fillings. Today I cheated slightly on my normal veggie dish by adding a few chopped up streaky rashers of bacon seasoned with paprika. This adds a full, different body of flavor to the dish in my opinion!



6 Flat Cap Mushrooms (2-3 per person)                                    4 Rashers of Streaky Bacon

3 Spring Onions Finely Chopped                                               1-2 Chopped Chilies (depending on your heat preference)

A handful of Cherry Tomatoes                                                   Mozzarella

Red Pesto/ Tomato Passata                                                        Chopped Garlic

A Handful of Fresh Basil                                                             Paprika and other herbs/spices to season






  1. Finely chop all main ingredients including the stalks of the mushrooms. I think this really effects the texture of your filling!
  2. Season the bacon with some paprika and cook out in a non-stick pan. Then drop down the temperature and then saute the vegetables.
  3. Once the veggies have cooked out drop the temperature down to barely simmering and add the passata / pesto followed by the fresh basil and any other seasoning you wish to add.
  4. Divide the peeled mushrooms evenly among the baking sheet and spoon the filling into the mushrooms. Top with slices of mozzarella and garish with black pepper.
  5. I bake my mushrooms for about 10 minutes at 180 Degrees Celsius. Make sure to watch them because they catch and burn really quickly!
  6. Serve with some broccoli, cous cous and any other green veggies you fancy!


This truly is my go-to dinner when I do not want anything heavy. The addition of mozzarella cheese on a tomato based sauce gives them an extremely healthy pizza-like feel. I will admit that they don’t look overly pretty when cooked but who cares when they taste lovely?! Especially if you love ‘shrooms like I do!
